Potaje de vigilia, Garbanzos, Espinacas y Bacalao, SEMANA SANTA, ideal semana 1º y 2º del Plan 123

  • Potaje de Semana Santa.  Sano y riquísimo, muy nutritivo para nuestro PLAN 123, Seguro que alguna vez habéis escuchado el dicho de los 40 días que hay entre Carnavales y Semana Santa que no se puede comer carne.
  • Ingredientes para 4 personas
  • 300 g. de garbanzos secos (sin remojar)
  • 300 g. de bacalao desalado
  • 250 g. de espinacas frescas
  • 2 cebollas medianas
  • 4 dientes de ajo
  • 1 cucharada de postre de Pimentón de la Vera (agridulce)
  • 1 hoja de laurel
  • 1 pimiento seco rojo (ñora) trozo de pan integral
  • Aceite de oliva virgen extra
  • Sal (al gusto)

 

PREPARACIÓN DEL POTAJE DE VIGILIA

Para cocinar los garbanzos en la olla rápida echamos un litro de agua, 2 dientes de ajo pelados, la hoja de laurel y los garbanzos ya remojados. Cerramos, ponemos a fuego alto y cuando comience a salir vapor, bajamos a fuego bajo y cocinamos 15 minutos.

Sofrito, picamos fino uno de los dientes de ajo y pelamos el otro. Pelamos las cebollas y las picamos en juliana pequeña en una sartén amplia vertemos aceite de oliva y freímos el ajo a fuego medio cuando empiece a estar dorado lo retiramos y echamos la cebolla y el otro ajo picado cuando empiece a estar pochada echamos el pimentón de vera y removemos para que no se pegue ni se queme.

Una vez hervido los garbanzos, colamos el caldo para separar el ajo y el laurel lo ponemos en una cazuela a fuego medio, vertemos el sofrito y removemos bien. Le ponemos las espinacas troceadas y limpias, las dejamos cocer unos minutos hasta que empieza a reducir,  echamos los garbanzos y desmigamos el bacalao o a trozos por ración grande,  ya desalado  y lo echamos a la cazuela,  cogemos por las asas la cazuela para mover y  ligar los ingredientes,  ponemos a fuego lento 10 minutos más. Rectificamos de sal al gusto.

Al final ponemos el ajo, un pimiento rojo (ñora) sin biznas, y una tostada integral machacamos y lo añadimos al potaje, 5 minutos más al fuego  y listo para servir y comer.
